Organic Pork and Summer Veg Recipes

Summer time is the perfect season for a pork dinner. Served with summer vegetables and a glass of wine, it’s the ideal evening meal during the warmer months of the year and here at Graig Farm, we know a number of mouth watering pork recipes for you to try this season.
 
Pork Steaks
Whether you’re a beginner in the kitchen or a complete pro, this pork steak recipe is easy enough for even the most novice of cooks. All you need is four of our organic pork steaks and a few seasonal vegetables to create this delicious treat for you and whole the family.
 
Ingredients

  • 1 Red Pepper
  • 1 Yellow Pepper
  • 2 Courgettes
  • 1 Bunch Of Spring onions
  • 4 Organic Pork Steaks
  • 1 Handful Of Rosemary Sprigs
  • 1 Handful Of Thyme Sprigs
  • 4 Garlic Cloves
  • 2 Tbsp Olive Oil

 
Method

  1. Chop the peppers, courgettes, spring onions and garlic.
  2. Fry the vegetables in 1 tbsp of olive oil on a high heat until cooked through, then leave to simmer.
  3. Chop the rosemary and thyme and combine with 1 tbsp of olive oil in a small bowl. Rub the mixture into the pork steaks and cook in the frying pan for around 10 minutes or until coloured on both sides. Serve and enjoy.

 
BBQ Leg Of Pork
If you’re after a summer Sunday lunch recipe, then you need to try this tasty dish. A leg of pork with grilled seasonal vegetables is perfect for a family dinner, plus barbecuing means you can dine outside in the summer sun.
 
Ingredients

  • 1kg Organic Pork Leg
  • 750 Gram Of New Potatoes
  • 1 Red Pepper
  • 1 Yellow Pepper
  • 2 Courgettes
  • 300 Gram Of Cherry Tomatoes
  • 3 Tbsp of Olive Oil
  • 1 Handful Of Rosemary Sprigs
  • 1 Handful Of Thyme Sprigs

 
Method

  1. Chop the peppers and courgettes and skewer onto a kebab stick with the cherry tomatoes then put to one side.
  2. Add the potatoes to a pan of hot water and boil until cooked. Once cooked, drain the water and put the potatoes in a bowl and drizzle with 1 tbsp of olive oil and sprinkle with chopped rosemary and thyme.
  3. Butterfly the leg of pork and brush 1 tbsp of olive oil onto the meat then place on the barbeque. Once one side is cooked, flip the meat and cook the other side.
  4. While the pork is cooking, grill the skewered vegetables over the barbeque until charred.
  5. Once the pork is cooked thoroughly, carve the meat into thin slices and serve with the new potatoes and vegetable kebabs.

 
Organic Pork Sausages
Want to create a dish the children will love? Then why not try our organic pork sausage and summer vegetables recipe. Simple and delicious, this dish will keep the whole family satisfied.
 
Ingredients

  • Pack of 8 Organic Pork Sausages
  • 1 Red Pepper
  • 1 Yellow Pepper
  • 2 Courgettes
  • 300 Gram Of Cherry Tomatoes
  • 6 Tbsps Olive Oil
  • 1 Handful Of Rosemary Sprigs
  • 1 Handful Of Thyme Sprigs
  • 1 Loaf of Sourdough Bread

 
Method

  1. Chop the peppers and courgettes and place in a deep baking tray with the sausages and tomatoes. Sprinkle with olive oil and the chopped rosemary and thyme
  2. Cook for around 45 minutes on 180c and occasionally turn the vegetables and sausages to make sure they cook evenly.
  3. Once cooked, slice the sourdough bread, serve and enjoy.
