Pasta Bake with Sausages or Bacon (Serves 4 - 6)

500g pasta (penne or rigatoni is best)
500g good quality sausages or 250g bacon
2 tins tomatoes
2 mozarella (low fat is ok if you prefer)
100g cheddar or parmesan (whichever you prefer)
1tsp oregano or basil
4 tbs olive oil

Heat oven to 175C/gas mark 4 - Cook the sausages/bacon in the oven for 20 minutes  in the pan/dish you intend to serve the pasta bake in

Cook pasta in boiling salted water for 7 minutes then drain

Meanwhile heat the tinned tomatoes with the olive oil and the herbs with salt and pepper to taste

Drain and chop the mozarella into small cubes

Grate the cheddar or parmesan

Chop the sausages or bacon into chunks/pieces

Mix the tomatoes and the pasta then add the cheeses and the sausages and stir well. Sprinkle with a little grated cheese

Bake for 20 minutes and serve with crisp green salad

Variation: I sometimes add broccoli or cauliflower to the bake - just add it to the pasta whilst it is cooking
