"The Bath.... Besides Champagne, the exquisites of Paris use milk, which is supposed to lend whiteness to the skin. The expense of this luxury is considerably diminished by an arrangement with the milkman, who repurchases the liquid after use"

"Take the milk of 12 cows in the morning and the evening cream of 12 cows, and pour into it 3 spoonfuls of rennet, and when it is come [i.e. the curd] break it, and whey it, and when it is well wheyed, break it again, and work into the curd 3lbs of fresh butter, and put it in your press, and turn it in the press for an hour, or more, and change the cloths, and wash them every time you change them. Let it lie 30 or 40 hours in the press, according to the thickness of the cheese; then take it out and wash it in whey, and lay it in a dry cloth till it is dry, then lay it on your shelf, and turn it often."

"Butter of the richest quality and flavour and appearance can be made from sweet cream. Were such butter not super-excellent, would noblemen have it on their tables every morning ? I consider butter out of the churn from sweet cream, and before it is handled, the most delicious. For my own use I would never desire better butter all the year round than that churned every morning from sweet cream. Such butter on a new cool baked oatcake, sweetened with flower virgin honey, accompanied with a cup of hot, strong coffee, modified with crystallised sugar and fresh cream, is a breakfast worth partaking of."
