The Bakery

"My father (Sir Garfield Todd) taught me a long time ago that you just keep throwing your bread upon the water, and if you're lucky it will come back as ham sandwiches"
Judith Todd, Sunday Times interview 1990

"To begin with bread, which nature did not intend to play humble squire to a baron of beef or to be buried in pompous napkins as stiff as a bishop's mitre; I am not speaking of rolls, nor yet those pitiful squares of spongy dough which figure at the left-hand side of dinner forks as a matter of custom; I am speaking of Bread - the staff of life, the nourishment of all mankind."

The Authentic Bread Company
We at Graig Farm are delighted to be working with the Authentic Bread Company, as their founders, Alan and Jane Davis, share with us many of the ideas on food quality and production.
They also make superb bread!
Alan and Jane describe their aims and products :
"The Authentic Bread Company was formed in 1995 with the aim to return the taste, texture and variety to bread which has been degraded over the last 30 years. In large part this is due to the way that modern methods of bread making have taken short-cuts in the traditional bread-making systems, by using additives (‘improvers’) to reduce the time taken to produce dough. Our bread doughs are left to ferment without the use of improvers in order to produce maximum flavour."

"Every item is hand baked in our Gloucestershire bakery from the finest organic ingredients and all are suitable for vegetarians. All of the breads apart from the Walnut & Cheese are suitable for Vegans. Our 100% Rye bread is completely wheat free and our White Soda and wholemeal Soda breads are yeast free and dairy free. We are totally committed to producing organic cakes, breads and savories that have that home baked flavour and our test kitchen is kept very busy researching the recipes and methods that made 'old fashioned' baking so memorable."

"We strive to provide products that are both organic and of high quality, where taste rather than just cost is paramount. Our efforts have been rewarded, in that over the past five years we have won six awards for our organic products, three in the Soil Association Good Food Awards and three in the Taste of the West competitions."
"The Company is registered with the Soil Association and carries their symbol on its products, your guarantee of organic status."
"Taste the difference!"

But in Kent, Sussex, Surrey, Middlesex, and many other parts of the Kingdom, not one woman in twenty is capable of making a loaf"
