The haricot bean is a variety of kidney bean, and is rich in iron, magnesium and zinc. They originate in Central and South America, and were brought to Europe in the 16th century. The name haricot derives from the French stew or haricot. They are useful in casseroles, purees and salads, and are the original 'baked bean'.
