Even non-vegetarians love this - it's a really hearty, tasty meal. Onion, garlic and carrot are sautéed in sunflower oil then we add passata, pesto and thyme. Finally we add stock and split red lentils and simmer until perfect. A topping of fluffy, cheesy mash sprinkled with grated cheddar cheese completes this lovely dish.
