Organic Pastas
Pastas are widespread throughout many areas of the world where suitable wheats are grown. In Spain they have fideos, a form of thin vermicelli; Austrian kasnudln is a stuffed square pasta; in the Jewish tradition lokshen is an egg noodle similar to tagiatelle; Siberian pel'mei is a semi-circular meat-filled pasta; and in China wontons are a deep fried pasta pacel.
Our range of award-winning pastas are traditionally made in Italy on a small-scale by artisan producers of a Co-op (Agricola Iris). This agricultural co-op is in the Po Valley and was founded by one of the country's organic pioneers. It is based in the heart of the WWF nature reserve of Oglio Sud.
Pasta requires a particular type of wheat - durum, which is a hard grained type. The durum wheat is stored and milled with great care to produce the highest quality pasta. The dough is mixed without heating and shaped using bronze plates to create a rough and porous surface that absorbs pasta sauces well.
Drying is done at low temperatures over a long time, a process similar to the sun-drying of the past. This ensures that the gluten is not damaged and the nutritional quality of the pasta is maintained.

Organic Rices
Rice is the world's most popular staple food, eaten by over half the world's population.
Like many of the world's staple crops it is a member of the grass family. There are two major types of rice - lowland (paddy) and upland (rain-fed). There are any varieties and types of rice - long and short grained, wild, etc.

Basmati is a type of long grained rice, originating in India, and having the attraction of having an aroma in both the raw and cooked state. The origin of the name is Bas coming from Sanskrit for fragrance and mati, a corruption from Mayup for ingrained or inborn.
On cooking, the grain elongates only, and the cooked grain has a characteristic shape and integrity. It is also naturally non-sticky, having relatively high levels of the compound amylose. This means that the grains remain separate after cooking.
Basmati is the customary name for certain varieties of rice with these unique properties that are grown exclusively in specific areas of the Indo Gangetic Plains, which currently includes the northern part of the Western Punjab (on both sides of the Indian and Pakistani border), Jammu, Haryana State, Uttaranchal, and Western Uttar Pradesh in India.

Organic Cous Cous
Cous cous is another product of Durum wheat. Particularly popular in North Africa, Sicily and Brazil, it is almost the 'instant carbohydrate for a meal, as it only needs the application of boiling water to be ready to eat. The flavour is similar to semolina, though more distinctive. It is very versitile and is good accompanying many types of dishes.
