Mutton
Welsh Mountain mutton is a Graig Farm speciality. A much neglected meat nowadays, Welsh Mountain mutton was always considered to be the very best mutton available. A Travel writer, George Borrow, in the 1860's wrote "if you want to see a leg of mutton in perfection, go to Wales". Defined as meat from a sheep over two years old, our mutton is as full of complex flavours as Borrow would have found 140 years ago. The meat is matured on the bone ('hung'), to improve flavour and texture. For best results, slow cooking is required, but whether a joint or diced meat in a casserole, the flavour is unsurpassed, and cooked properly, it is as tender as lamb.
