Lunch Box Ideas Using Organic Produce

Sweet Chilli Chicken Salad
 
Ingredients

  • 1 Organic Chicken Breast Fillet
  • 1 Tbsp Chilli Sauce
  • ½ Tbsp Honey
  • ½ Tbsp Olive Oil
  • 1 Crushed Garlic Clove
  • 50g Rice Noodles
  • 50g Spinach
  • 1 Spring Onion
  • ½ Carrot
  • 1 Red Pepper

 
Method

  1. Heat the olive oil in a pan and fry the chicken breast until cooked through. Then place to one side and leave to cool.
  2. Using the same pan, mix together the chilli sauce, honey and garlic until to make the sweet chilli sauce, then leave to one side.
  3. Shred the carrot and chop the red pepper and spring onion. Once the chicken and sauce has cooled, combine with the chopped vegetables and rice noodles.
  4. Store in a cool, dry plastic container and keep refrigerated. Remove from the fridge around 30 minutes before serving.

 
Spicy Sausage Pasta Bake
 
Ingredients

  • 2 Organic Pork Sausages
  • ½ Tbsp Olive Oil
  • 1 Small Onion
  • 2 Small Mushrooms
  • 100g Tomato Passata
  • ½ Tsp Chilli Powder
  • 100g Fusilli Pasta

 
Method

  1. Chop the onion and mushrooms and heat in a pan with the olive oil.
  2. Cut the sausages into small circles and add to the pan and heat until thoroughly cooked through.
  3. Empty the tomato passata into the pan and add the chilli powder. Stir with the sausages and vegetables then leave on a low heat to simmer.
  4. In another pan, add the pasta to boiling water and cook for around 15 minutes. Once cooked, drain the water and add the pasta to the sausage and passata. Mix well until the pasta is covered in the sauce.
  5. Leave to cool overnight in a plastic container then place in the fridge. Before eating, heat the dish in a microwave for around 30 seconds.

 
Beef and Mustard Sandwich
 
Ingredients

  • 100g Organic Beef Stir Fry Strips
  • ½ Tbsp Olive Oil
  • 2 Slices of Multi Seed Bread
  • 10g Butter
  • 1 Tbsp Mustard
  • 1 Large Gherkin
  • 1 Large Tomato

 
Method -

  1. Add the olive oil to a frying pan then cook the beef stir fry strips. Remove from the pan and leave to cool.
  2. Chop the tomato and gherkin into slices.
  3. Butter the slices of multi seed bread then add the beef strips, tomatoes and gherkin then spoon the mustard over the fillings.
  4. Wrap in foil and keep refrigerated until the next day. Remove from the fridge around 30 minutes before serving.
